Mid-AutumnFestival is on September 13. In order to weed out less tasty mooncakes,we spent a hefty amount of money and shopped at TNT for mooncakes, and decidedto do a review on Lava egg custard mooncakes! We will tell you which brand has the best mooncakes.

这次参与测评的有美心、荣华、家好月圆、广州酒家和陶陶居。里面还有个隐藏大boss,就是小编从国内运过来的“皇玥月饼”

The brandsreviewed here are: Maxim’s Wing Wah, Jiahaoyueyuan,Guangzhou Restaurant, DoubleLucky, and last but not least, Imperial Patisserie, which I brought all the wayfrom China.

这次测评,我们将会从包装、味道、流心馅的比重、奶香程度等方面测评!

In thisreview, we will rate each brand on its packaging, taste, the ratio of thefilling, and fragrance.

In 2014,Maxim launched the first ever mooncake with a molten filling, which created anew category of mooncakes that is different from both traditional and snow skinmooncake – molten centre mooncake, which was the best-selling category ofmooncakes in Hong Kong for two years in a row. Maxim’s may be considered thefather of all molten centre mooncakes.

这一盒是族长斥重金从国内运过来的美心月饼,因为多伦多这边的流心月只有传统的,没有焦糖咖啡口味。族长说,既然要测评,当然要什么口味都试一遍。于是小编就很有口福了!

The editorin chief spent a great deal of money and brought this box of mooncakes all theway from China, since Maxim’s molten-centre mooncakes in Canada only has theoriginal flavor and not the caramel coffee flavor. The editor in chief said,since we are doing a review, then we have to try all the flavors.

常温下的流心奶黄月饼依然呈现流心的状态,但是奶黄味道不浓重。流心质地的馅料和厚实的饼皮比较薄,很容易弄碎。它也是所有测评的月饼中,流心馅的比例最重的月饼

When thesemooncakes are stored at room temperature, their fillings still appear to bemolten. However, they do not have a strong fragrance. The solid skin of themooncake is quite thin and easily broken. It has the greatest filling to cakeratio amongst all the different brands of mooncakes tested here.

加热10s后,流心的情况更明显。

Aftermicrowaving them for 10 seconds, their fillings became even more runny.

咬下去口感绵密,咸蛋黄的咸味和奶香的甜味交织在一起,层次丰富。

Themooncakes have a fine and velvety texture, the tastes of the salty egg yolk andsweet custard mix together and create a layered flavor.

饼皮色泽较深,切的时候就能闻到了流心咖啡的味道,入口也很浓郁,这是小编整个测评最爱的一个口味之一。

The caramelcoffee mooncakes surprised me the most, I highly recommend them. The color ofthe skin is rather dark, and the smell of the coffee filling is exposedimmediately upon the first cut. The flavors are very strong, they are myfavorite mooncakes out of the bunch.

Wing Wah isone of the top three mooncake brands in Hong Kong. It is a part of Wing WahCorporation in Hong Kong, which is one of the most popular mooncake brands inHong Kong.

香港荣华奶黄月饼的饼皮是最好的,饼皮最大特点就是酥化。不过相对其他品牌,它家流心的情况不是很好。常温下,完全不流心,馅料的中心部分蛋黄味浓郁。

The custardmooncakes have the best skin, it is very soft and crumbly. However, incomparison to mooncakes from other brands, the fillings are not very runny.When stored at room temperature, the central fillings are completely solid. Thefilling has a strong taste of egg yolk.

加热10s后,有一点流心的情况。但是不是特别明显,估计还要加热多几秒会比较好。奶香味比较足,味道中规中矩。但是如果你讲究流心的口味,那这个月饼未必适合你。

Aftermicrowaving these mooncakes for 10 seconds, the filling becomes a littlerunnier, but it isn’t very significant. There is a very nice fragrance to them,but their taste is mediocre. For those of you that value taste the most, thisis probably is not the best option for you.

一说广州酒家,广州人都知道~但是谁也没想到这家百年老字号,最赚钱的竟然是月饼?!连续3年,月饼产销量均位居全国同行业之首,可见这月饼多么受欢迎。偷偷告诉你们一个小秘密,据路透社的消息指出,这家的月饼其实和白天鹅酒店的月饼是同一个工厂生产的。 

Everyonefrom Guangzhou has heard about Guangzhou Restaurant, but did you know, thattheir best-selling product is mooncakes? Their mooncakes were the best-sellingones in China for three years in a row, which shows how popular these mooncakesare. On a side note, according to various sources, Guangzhou Restaurantproduces their mooncakes in the same factory as White Swan Hotel.

包装方面,广州酒家的就很贴心,无论是每个月饼都有独立包装盒,让月饼不容易碎。而且还随盒附送刀叉

As forpackaging, each mooncake is packaged individually, which protects them frombreaking. Utensils are also included.

这款芝士流沙奶黄稍稍带点咸味,常温的时候,也有稍微流沙,入口的时候,芝士味比较浓。

This melting cheese custard mooncake is slightly salty. When it’s storedat room temperature, the filling is sort of runny. There is a strong cheesyflavor.

加热后,芝士和流沙蛋黄融为一体,芝士味反而没这么浓,更加突出了蛋黄咸香味。广州酒家的月饼,内陷都比较湿软,饼皮也适中。

After themooncakes are heated, the cheese and molten egg yolk fillings combine, whichcauses the cheesy flavor to fade, and the lovely fragrance of the egg yolkbecomes more prominent. These mooncakes have a rather moist filling, the skinis neither too hard nor too soft.

陶陶居的历史可以追溯到清光绪年间,后经历停业、扩建,在上世纪三十年代重新开张,“中华老字号”、“国家特级酒家”

The historyof Double Lucky can be traced all the way back to the reign of Emperor Guangxu.After being closed down and expanded, it reopened in the 30s. It is also knownas a time-honored brand, and a premium restaurant in China.

包装方面,陶陶居和广州酒家一样很贴心,无论是每个月饼都有独立包装盒,让月饼不容易碎。而且还随盒附送刀叉。看来广州的月饼市场竞争大,所以大家对细节都很追求。

In terms ofthe packaging, Double Lucky has done the same as Guangzhou Restaurant, andpackaged mooncakes individually, which prevents them from cracking andbreaking. Utensils are also included. This shows that the competition inGuangzhou’s mooncake business is quite fierce, since everything pays so muchattention to detail.

这盒是黑皮流心奶黄月,刚开始以为黑皮是用竹炭做的皮,不会有任何味道,吃了之后发现不对劲,才看英文名字,原来饼皮是巧克力味的。

Weinitially thought that bamboo carbon was used in the making of the mooncakeskins, and would not interfere with the taste. When we took a bite into it, wediscovered that the color is actually caused by the addition of chocolate intothe skin.

烤出来的外皮颜色很ok,色泽均匀,水准依然在线。

The skinhas a very even coloring.

加热10s后,一刀切下去,流心缓缓流下!饼皮厚薄适中,吃起来也不会太甜腻,不过蛋黄味和奶香味再浓郁一点就更好了。

Aftermicrowaving the mooncakes for 10 seconds, the filling practically oozed outimmediately as we cut into it. The thickness of the skin is fine, the mooncakesare not overly sweet, but I do wish that the mooncakes were more fragrant witha stronger flavor of the egg yolk.

今年也紧随奶黄热潮,家好月圆推出了全新的流心奶黄月饼。常温下也流心~

As the trend of molten-centre mooncakes grows, Jiahaoyueyuan has alsoproduced their version of the molten-centre mooncake. The fillings of these arerunny even when stored at room temperature. 

不过饼皮有点薄,加热10s后,皮就破开。如果你买了这盒月饼,估计加热5-8s就够了。味道就中规中矩,相对与其他几个品牌,这款算是没什么亮点。不过胜在价格划算,如果你只是想过过吃流心月饼的瘾,也可以买一盒。

The skin,however, is kind of thin. After microwaving the mooncakes for 10 seconds, theirskin cracked. Preparation time should be adjusted to 5 to 8 seconds. The tasteis mediocre. Compared to the other brands reviewed, these mooncakes do notstand out. They are less pricey compared to the other brands, so if you justwant to try some molten-centre mooncakes, these would be suitable.

半岛奶黄月饼之父叶永华师傅和米其林二星的黎永冠师傅担任首席饼艺大师的皇玥月饼,去年在香港一推出就断货,今年族长就斥巨资从国内买过来。

ImperialPatisserie mooncakes were created jointly by the father of custard mooncakes,Chef Yonghua Ye from the Peninsula Hotel, and Michelin two-star chef, ChefYongguan Liang. These mooncakes were sold out as soon as they hit the shelves.The editor in chief brought these mooncakes all the way from China.

在有着“食品诺贝尔奖”之称的“世界食品质量评鉴大奖”Monde Selection 中,皇玥流心月饼勇夺最高金奖,成为唯一一款获得该奖项的香港月饼。

Thesemooncakes came in first place when reviewed by Monde Selection, which isbasically the Nobel Prize of food. They were the only Hong Kong mooncakes thatwon such an award.

一盒有8个月饼,放在一个双层首饰月饼盒,看起来像皮革制造一样,很有质感。

Each boxcontains 8 mooncakes, which are placed inside a two-drawer mooncake box. Thematerial that the box is made of looks like leather, which gives it a veryrefined air.

月饼的口感很对得起半岛奶黄月饼创始人的名声,它有非常浓郁的奶香,奶味和蛋黄味平衡的很好,不会过于甜腻。饼皮比较酥软,色泽均匀,饼皮和馅也会紧密连在一起。常温下,还是会流沙,不过可以发现,它家的月饼,流沙馅是最少了,还不够1g。

Their tasteis faithful to their fame. They are very fragrant, have a nice balance of thetaste of milk and egg yolk, and are not overly sweet. The skins are moist. Themooncakes have a very even coloring, and the skin and filling are tightly heldtogether. When stored at room temperature, the filling still appears to bemolten. However, these mooncakes have the lowest filling to mooncake ration,the filling weighs less than 1g.

加热10s后,流心像破了壳的鸡蛋黄缓缓往下淌。内陷的料做得很细腻,浆里面是沙沙的细腻颗粒。

Afterheating them for 10 seconds, the filling oozes. The filling is has quite adelicate texture.

族长买了两种口味,一个是流心奶黄,另一款是姜汁莲蓉流心。让小编惊讶的是姜汁莲蓉流心,浓郁的咸蛋黄流沙里有着淡淡的姜汁味,非常好吃

The editorin chief bought two flavors. One of which is custard, and the other is gingerlotus paste. The latter flavor has a salted egg yolk filling laced with ginger,which is very delicious.

测评完才发现有说明书,和一般的流心月不一样。这里是建议用烤箱或是平底锅加热

They should be prepared in an oven or over the burner in a skillet.

对了~吃完月饼不要把月饼盒扔了,因为可以当首饰盒用哦!

You couldsee that Guangzhou Restaurant’s cheese mooncakes have the highest caloriccontent amongst the mooncakes reviewed today. Jiahaoyueyuan’s matcha mooncakehas the highest sugar content. Maxim’s caramel coffee mooncake has the highestfilling to mooncake ratio.

这次的黑马,就是皇玥。不愧是半岛奶黄月饼之父叶永华师傅创造的品牌,有着半岛酒店奶黄月的影子。如果你喜欢奶黄月+流心月,那一定要选择皇玥。其中让小编惊讶的是姜汁莲蓉流心口味,浓郁的咸蛋黄流沙里有着淡淡的姜汁味,非常好吃。

The winnertoday is the mooncakes from Imperial Patisserie. They taste sort of similar tothe custard mooncakes from the Peninsula Hotel, since they are created by thesame chef. If you like mooncakes with molten custard fillings, then you mustchoose those from Imperial Patisserie. The ginger lotus paste ones surprised methe most. The salted yolk filling is laced with ginger, which is delicious.

如果你和小编一样,喜欢比较纯粹的咸蛋黄流沙,那还是美心比较好吃。而且一定要试试焦糖咖啡味,让人一试难忘。

If you arelike me, and prefer salted egg yolk fillings, then Maxim’s would be yourchoice. You must try the caramel coffee ones, they are quite unforgettable.

When you break apart a pineapple cake, you could seethe fibers of the pineapple filling.

For theirten year anniversary, Sunny Hills has created pineapple mooncakes. Just liketheir pineapple cakes, these mooncakes have fillings made solely out ofpineapples. When you break them apart, you could see the pineapple fibers. Thepineapple filling has a tangy taste with a hint of milk, with each bite, youmay recognize a slight fragrance of the egg yolk. If you like pineapple cakesfrom Sunny Hills, then these mooncakes would be an absolute favorite of yours!
